From the kitchen: Preserving eggplants



Our eggplant bush is full of flowers and threatening an abundance of little babies in the next week or so.

I'm on the look out for recipes for preserving eggplants.  Any suggestions very welcome.  Here are a few recipes I have my eye on:

Melanzane Sott'Olio (Pickled Eggplant under Oil)

Marinated eggplant

Yum!
Vince's mum makes the melanzane in oil (she does green tomatoes the same way).
I love them on bread.
My mum has been making many batches of Moussaka with her eggplants.
But my favourite eggplant dish is eggplant croquettes.

I am definitely googling eggplant croquettes. Moussaka is a hard sell here, plus I'm back to being dairy free sadly (and not by choice).
